Fresh Striped Bass on the Grill

When you spend the day fishing in the Boston Harbor and you come back with loads of fresh striped bass, you better hope you like fish! Luckily, Captain Scott was able to give us a couple of ideas on how to prepare the fish. Turns out, with a great starting ingredient it's pretty easy.

The Necessities...
  • Striped Bass
  • Capers
  • White Wine
  • Garlic Powder
  • Olive Oil
  • Salt
  • Pepper
Simple assembly from there.  Lay out two pieces of tin foil on the counter and turn up the sides to create a little bowl.  Be sure to have enough of a side to be able to cover the fish and to allow some air circulation (like a tent).  Pour a couple of teaspoons of olive oil in the "bowl" and then place the fish on top.  Next, drizzle a little olive oil over top the fish and then place cleaned capers and white wine (1/4 cup) on the fish as well.  Lastly, season with garlic powder, salt and pepper to taste.

Build your tent over the fish and place it on the grill and cook for about 10-12 minutes - until you can flake the fish easily with a fork.

This was super easy and tasty. Tin foil made for easy clean up (even better because I was on dish duty!). The capers were a great suggestions because they added a great salty flavor and texture. The views from our deck only made the dinner better.  How great are the sunsets we have had lately?!

I am always amazed how easily fish can be to cook. This recipe will definitely be put to use on some of the other fish we now have in our freezer.

  1. White wine and capers... sounds like an awesome way to prepare fish! I love capers and use them in piccata and other dishes.

  5. While going out for dinner at a great grille and resto is a great idea, nothing beats having your own backyard grill – especially if they’re freshly caught! That striped bass looks delicious! I can only imagine how good it smells. I’m going to try that the next time we have a cookout in the backyard. Hopefully I can find some good bass when that time comes. Happy eating!

  6. It looks good enough to serve in a resto! Well, with a decent plating and a bit of a side dish, that is. You’d think restos do something special to it, then find out it’s this simple to prepare! This would be a great dish to serve when you have guests over; and you can fancy it up to impress the boss, if ever. Cheers!
