Baked Black Bean Buritto - healthy with a kick

Most of the time I find it hard enough to cook on Monday nights, but coming up with a new and creative meatless recipe can make a Monday meal even more difficult! Lucky for me, this was another edition of Nick Cooks!

Nick found a burrito recipe that actually looked quick and healthy and seemed to have some good heat - even better.

The Necessities...
  • 1 (7-ounce) can chipotle chiles in adobo sauce
  • 1/2 cup reduced-fat sour cream
  • 1 (15-ounce) can black beans, rinsed, drained, and divided
  • 1 cup frozen whole-kernel corn, thawed
  • 4 (8-inch) flour tortillas
  • Cooking spray
  • 1 cup bottled salsa
  • 1/2 cup (2 ounces) shredded Monterey Jack cheese
The Ingredients

The first step was to take one chili from the can, finely chop it, and combine it with the sour cream in a bowl.

Next, he chopped half of the beans using his knife. The recipe actually suggested using a food processor, but it sort of seemed unnecessary to dirty all of that equipment for one ingredient.

The chopped beans, the remaining whole beans, and the corn were added to the bowl with the sour cream mixture.

With the mixture combine, he then spooned about a half cup of the mixture down the center of each of the tortillas.

He rolled the tortillas up and placed them seam side down in a 11 x 7 baking dish that was coated in cooking spray.

Finally, Nick topped the burritos with salsa (in this case, a chipotle salsa he found at Whole Foods)...

and placed the dish in a 350 degree oven for about 20 minutes.

Nick served the dish with some tender steamed broccoli, and everything was great! Turns out, when Nick was on the first step, he actually used double the amount of chipotles, which provided a great kick (in case you could not already tell, we are a house that likes a lot of spice in our food.) This dish also could easily be adapted to include a meat but it was totally satisfying without any extras. Once again, Meatless Monday pushed us outside our comfort zone with great results.
